Lucy's Lemon Bars

The Peanuts recipe of the month is Lucy's Lemon Bars. I actually did make this recipe twice; it is a simple almost anyone can do it bar. Lucy's Lemon Bars have a mild lemony flavor and not as tart as I would have liked; but it is still a sweet and comforting sort of bar. A great lunch or after supper snack.

This recipe is over 40 years old. Can you imagine a mean little black haired girl making lemon bars on an autumn afternoon? I can't, unless it would be my sister Laurae. Lucy would be too busy trying to get Charlie Brown to kick the football.

    I don't know the correct way of spelling it though. =)
    Where do they even have that name?? I don't remember ever reading it in the comics. Did we hear it while watching the cartoons?

  2. I had this book as a kid. Found it a few years ago and saw were that recipe was crossed out. Some warning was issued but I don't remember why. I just knew they didn't want you to make them anymore. i thought it may have been becaused it used raw eggs, but i see where it is all baked so I hav eno idea why it was pulled

  3. OMG! I have been making the same recipe since I was in grade school! Part of my recipe card was smudged and could not read how many eggs. I googled the name and here you are...thank you, thank you, thank you!

  4. It was NOT the lemon bar recipe that was crossed out. It was the lollypop recipe that was crossed out. I think it was a concern about children burning themselves with melted sugar. I had this book, and the replacement recipe---neither of which I can find right now. Hence, here I am trying to find my favorite recipe for Lucy's Lemon Squares!

  5. Just wanted to give a BIG shout out to Lucy I made these when I was in high school 67-68 that makes these closer to 55 years old. Still the best Lemon Bars.

  6. at my school they told us not to make the lemon bars because of the lemon extract ingredient's alcohol. haha.

  7. Thank you for posting!! I made these bars every day for a month with children I babysat 30 plus years ago. I have been searching for this recipe after every disappointing batch of lemon bars I've ever made since. Random-- maybe.

  8. got this cookbook in 6th grade. we all had to bring the books back so they could remove this recipe. reason: lemon extract's alcohol content. ridiculous!
